Pengaruh Jenis Kemasan terhadap Total Mikroba dan Uji Organoleptik Tempe Kedelai

Penelitian ini bertujuan untuk melakukan penelitian tentang Pengaruh Jenis Kemasan Terhadap Total mikroba dan Organoleptik Tempe Kedelai (Glicine Max). Metode pada penelitian ini menggunakan rancangan acak lengkap (RAL) dengan tiga kali ulangan. Dengan perlakuan A1 menggunakan kemasan Plastik polypropylene, A2 gabungan antara daun pisang dan plastik polypropylene, dan A3 menggunakan daun pisang. Dari hasil analisis sidik ragam menunjukkan bahwa perbedaan perlakuan kemasan plastik, dan daun pisang tidak berpengaruh terhadap kadar kapang yang diperoleh. Tingkat kesukaan yang dihasilkan dari 3 perlakuan tempe kedelai dengan kemasan yang berbeda secara keseluruhan berada pada skala 2,76 – 4,08 atau dalam taraf agak suka sampai suka dan tempe kedelai yang disukai oleh panelis adalah perlakuan A2 dan A3.
