Peningkatan Nilai Tambah Kelapa melalui Produksi Santan Higienis dan Bermutu bagi Kelompok Tani Bonto Pengka, Desa Karassing, Kabupaten Bulukumba

Kelapa dalam merupakan salah satu komoditas perkebunan yang memiliki peran penting dalam perekonomian masyarakat dan menjadi salah satu hasil pertanian unggulan di Kabupaten Bulukumba. Tanaman ini memiliki keunggulan karena dapat diproduksi secara berkelanjutan sepanjang tahun sehingga ketersediaannya relatif terjaga di pasar. Salah satu kelompok yang mengusahakan komoditas tersebut adalah Kelompok Tani Bonto Pengka di Kabupaten Bulukumba, yang menjadikan kelapa dalam sebagai komoditas utama selain kakao dan jagung. Kelompok tani ini mampu menghasilkan sekitar 4 ton kelapa dalam setiap musim panen. Namun demikian, nilai ekonomi yang diterima petani sering kali tidak optimal karena harga jual kelapa sangat dipengaruhi oleh fluktuasi pasar dan ditentukan oleh tengkulak. Pada saat harga mengalami penurunan, kelapa hanya dihargai sekitar Rp2.000 per buah, jauh lebih rendah dibandingkan harga normal yang berkisar antara Rp5.000–Rp6.000 per buah. Kondisi tersebut berpotensi menurunkan pendapatan petani dan mengurangi keuntungan usaha tani. Oleh karena itu, diperlukan upaya peningkatan nilai tambah melalui pengolahan kelapa menjadi produk yang memiliki nilai jual lebih tinggi dibandingkan menjualnya dalam bentuk buah segar. Salah satu produk olahan yang berpotensi dikembangkan adalah santan siap pakai karena memiliki permintaan pasar yang cukup tinggi dan dapat memberikan nilai ekonomi yang lebih besar. Pelaksanaan program ini memberikan kontribusi berupa penyaluran alat produksi santan siap pakai dan meningkatkan pemahaman anggota kelompok tani mengenai teknologi pengolahan kelapa menjadi santan bermutu. Hasil program menunjukkan adanya peningkatan kesadaran anggota kelompok tani Bonto Pengka terkait pentingnya pengolahan kelapa dalam meningkatkan nilai jual kelapa. Selain itu, peserta juga memahami bagaimana teknik dan metode pembuatan santan siap pakai yang bermutu dan higienis serta strategi pemasaran kelapa dan santan ketika menghadapi fluktuasi harga kelapa di pasaran.
