Pengembangan Teknologi Produksi Keripik Laut Rendah Minyak Berbasis Komunitas untuk Meningkatkan Penghidupan dan Ketahanan Iklim Pesisir di Luwu Utara, Sulawesi Selatan

Kegiatan pengabdian kepada masyarakat ini bertujuan untuk mengembangkan teknologi produksi keripik rumput laut rendah minyak berbasis komunitas di Kabupaten Luwu Utara, Provinsi Sulawesi Selatan. Masyarakat pesisir Luwu Utara telah lama membudidayakan rumput laut jenis Eucheuma Cottonii sebagai mata pencaharian utama, namun pengolahan bernilai tambah masih sangat terbatas, sehingga pendapatan masyarakat tetap rendah dan rentan terhadap fluktuasi harga komoditas. Program ini memperkenalkan teknologi penggorengan vakum (vacuum frying) berskala komunitas yang dikombinasikan dengan penguatan kapasitas masyarakat secara komprehensif, meliputi pelatihan teknologi pengolahan, pengendalian mutu produk, pengemasan dan pelabelan, manajemen usaha, serta pemasaran digital. Hasil kegiatan menunjukkan bahwa masyarakat berhasil memproduksi keripik rumput laut dengan kadar minyak rata-rata 12,3 ± 1,8% (b/b), jauh lebih rendah dibandingkan keripik hasil penggorengan konvensional (28,7 ± 2,3%). Kualitas sensoris produk dinilai lebih unggul dengan masa simpan mencapai 60 hari. Pendapatan rumah tangga meningkat sekitar 45% dibandingkan penjualan rumput laut kering mentah. Peserta menunjukkan peningkatan pengetahuan dan kepercayaan diri yang signifikan dalam mengelola usaha pengolahan berbasis teknologi. Program ini berkontribusi pada penguatan ketahanan iklim pesisir melalui diversifikasi sumber pendapatan, mengurangi ketergantungan pada komoditas tunggal, dan membangun kapasitas adaptif masyarakat terhadap gangguan iklim. Model program ini dapat direplikasi di komunitas pesisir budidaya rumput laut lainnya di Indonesia bagian timur.
