Pendampingan Pengolahan Buah Pinang Menjadi Ekstrak Kopi melalui Studi Eksperimental di Kabupaten Merauke

Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan nilai tambah buah pinang melalui inovasi pengolahan menjadi ekstrak kopi berbasis potensi lokal di Kabupaten Merauke, meningkatkan keterampilan masyarakat dalam pengolahan produk berbasis pinang, serta membuka peluang usaha baru bagi pelaku UMKM lokal. Mitra dalam kegiatan ini adalah mama-mama Orang Asli Papua (OAP) pelaku UMKM pinang dan pelaku usaha warkop lokal yang selama ini masih memanfaatkan buah pinang secara tradisional dengan nilai ekonomi yang terbatas. Kontribusi kegiatan kepada mitra meliputi transfer pengetahuan dan keterampilan pengolahan pinang, pendampingan produksi berbasis Teknologi Tepat Guna (TTG), pengembangan inovasi produk minuman lokal, serta penguatan peluang usaha berbasis ekonomi kreatif. Metode yang digunakan adalah pendekatan Teknologi Tepat Guna (TTG) berbasis studi eksperimental yang meliputi tahapan identifikasi bahan baku, formulasi varian rasa, proses pengolahan, pendampingan, dan evaluasi. Hasil kegiatan menunjukkan bahwa inovasi pengolahan pinang menjadi ekstrak kopi dapat dilakukan dengan memanfaatkan alat sederhana dan bahan lokal yang mudah diperoleh. Dua varian produk berhasil dikembangkan, yaitu varian pinang kering dengan komposisi 75% kopi dan 25% pinang sangrai, serta varian pinang basah dengan tambahan topping pinang segar, telur ayam kampung, dan gula. Uji organoleptik menunjukkan bahwa kedua varian memiliki tingkat penerimaan yang baik dari peserta, terutama pada aspek rasa, aroma, dan kebaruan produk. Selain itu, kegiatan pendampingan mampu meningkatkan pengetahuan dan keterampilan masyarakat dalam proses produksi serta membuka peluang pengembangan usaha berbasis UMKM. Secara keseluruhan, kegiatan ini menunjukkan bahwa pengolahan buah pinang menjadi ekstrak kopi berpotensi menjadi produk unggulan daerah yang mendukung penguatan ekonomi lokal
